1. Why did my cake sink in the middle? A cake usually sinks due to one of three “formula” errors: the oven door was opened too early, there was too much leavening agent (baking powder/soda), or the cake was underbaked. Check our “Baking 101” section for a deep dive into oven calibration!
2. Can I substitute ingredients in your formulas? Baking is a science! While some substitutions work (like Greek yogurt for sour cream), others can change the chemical structure of the cake. We recommend following the recipe exactly the first time. If we have tested a substitution, we will list it in the “Notes” section of the recipe.
3. Do you provide metric measurements (grams)? Yes! Whenever possible, we provide measurements in both US Cups and Metric (grams). For the most accurate “Cake Formula” results, we highly recommend using a digital kitchen scale.
4. How should I store my finished cake? Most unfrosted cakes stay fresh at room temperature in an airtight container for 2-3 days. If your cake has cream cheese frosting or fresh fruit, it must be refrigerated.

6. Can I reduce the sugar in your recipes? Sugar doesn’t just provide sweetness; it also provides moisture and structure. Reducing it significantly may result in a dry or tough cake. If you’re looking for lower-sugar options, look for recipes specifically formulated for that purpose.
